My neighbor was always up for happy hour on her deck which is surrounded by the most beautiful cactus garden ever. I always come home inspired from her place and this painting is a result of that.

Prickly Pear Cactus have been a staple food of Native Americans for many centuries. Their large blossoms grow from the tip of cactus nodules, which later ripen into delicious red fruit. Prickly pear juice can be used to make jams, jellies, desserts, or poured on salads. Studies have shown that the pectin contained in the Prickly Pear pulp lowers levels of cholesterol. And the fibrous pectin in the fruit lowers a diabetic’s need for insulin.
